Ingredients

180g Te Atatu Toasted Healthy Blend Muesli
50g plain flour
1⁄2 tsp salt
1tsp baking powder
65g butter
1⁄4 C milk - approx

Method

Combine all dry ingredients in a food processor and blitz for a minute, then add the butter and blitz again until well mixed. Add the milk as you blitz until it starts to get sticky and almost forms a ball. If it gets too sticky – just sprinkle with more flour when rolling out. Roll out very thin on a well floured surface, then use a biscuit cutter to cut the shapes, then pace on a cooking tray. Bake @ 1800C fanbake for 15 minutes

Alternatively – I roll straight out onto a well floured baking tray and then use a knife to score vertically then horizontally to make a grid of biscuits and cook it straight in the oven like this. The biscuits perhaps don’t look as good as ones cut with a cutter – they look home made – but they taste just as good and it is a lot easier!!

Makes approx 25

These are delicious with cheeses and chutneys.
