Salads are great to have in the fridge ready to go either for lunch or as a side for dinner. I love broccoli and this is my go to salad.

For the dressing:

1/2 cup sugar free mayonase or make your own from our recipe in here

1 tablespoon sugar (optional)

2 tablespoons cider vinegar

Mix together - set aside

For the salad:

2 medium broccoli - chop into bite size chunks

1/3 red onion thinly diced

1/2 cup Te Atatu Toasted Gluten Free Muesli

Mix the broccoli, onion and muesli together then add the dressing and mix well. Let it marinate together at least an hour before eating. 

I like to make this salad and have it sitting in the fridge ready for lunch for a few days. Lovely for lunch with a boiled egg.
