Deliciously chewy – they are are great to have on hand when you just need a little something and want it to be healthy.

This recipe was created by Wick from Wicked Wellbeing.

Ingredients:

1&1/3  c Te Atatu Toasted Paleo Blend

1 c desiccated coconut

1/3 c coconut sugar

¼ c cocao nibs

1/3 c coconut oil or 80g butter

2T honey

½ t baking soda mixed in 2T boiling water.

Method:

Preheat oven to 150°C. Line a 20cm x 20cm baking dish with baking paper or baking sheet. Combine all dry ingredients in a bowl. Melt the coconut oil (or butter) and honey in a pot, add the water and baking soda mixture and then add to the dry ingredients and stir to evenly combine. Press down firmly (with damp hands if needed) into the prepared dish. Bake for 15-18 minutes or until browned on top –  when it comes out of the oven , it’s quite soft, it will firm up as it cools. Let it cool and cut up into slices and store in an airtight container in the fridge. Suitable to freeze.

Prep time: 5 minutes | Cook time: 18 minutes | Makes: approx. 20 slices – depending what size you cut them to.
