This chocolate bark recipe is so easy to make, and perfect when you need something simple and quick with a wow factor. All you need is your favourite chocolate and my paleo muesli - the lightly toasted coconut, seeds and nuts in the paleo mix makes it perfect for this recipe. Also, my paleo muesli is gluten free, dairy free, vegan and low sugar and low carb, so depending on what chocolate you use, this recipe can suit many dietary requirements. I have used Whittakers Dark Ghana but you could use milk chocolate or even a sugar-free chocolate.

Ingredients:

100g Whittakers Dark Ghana

1/2 teaspoon coconut oil

3 tablespoons Te Atatu Toasted Paleo Blend Muesli

1 tablespoon approx goji berries

Method:

Place a sheet of baking paper or a silicon sheet in a tray.

Break the chocolate up and place in a microwave bowl with the coconut oil. Melt in the microwave in 30 second bursts, stirring between each burst. This is important to stop the chocolate seizing. Once it is almost melted, remove from the microwave and stir well. Pour the melted chocolate onto the prepared paper/sheet and use a rubber spatula to spread it out to 2mm thickness. Sprinkle the paleo muesli and berries evenly over the top. Place it in the fridge to set.

 

To serve, you can remove from the paper and leave whole and place on a board, like in the picture, and let people snap off their own bits or you can cut or break into chunks.
