Here's a recipe for a healthy breakfast cookie, perfect for busy mornings or teenagers who need a low sugar breakfast but can't face eating a bowl of cereal. They are high fibre, high protein and low sugar, low salt so you know they are a healthy breakfast option. 

 

They also make the perfect healthy snack to have with a cuppa or put in kids lunchboxes.

  

Ingredients

1c Te Atatu Toasted healthy blend muesli

3T almond meal

1.5T chia seeds

2T goji berries (raisins or low sugar dried cranberries work too)
2T sugar free chocolate chips (optional)

Pinch of salt

1/2 banana, mashed

2 1/2T almond butter* (peanut butter works too but ensure it is a wet mixture)

2T maple syrup

2T coconut oil, melted

1/2t vanilla extract

Method

  1. Preheat the oven to 180C and line a baking tray with baking paper.
  2. Mix the dry ingredients in a large bowl and the wet ingredients in a medium bowl.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Use a cookie scoop* to make even sized cookies and press down gently.
  5. Bake for 12-15 minutes, or until golden brown. Cool for 5 minutes on the tray the transfer to a cooling rack.

* I have also made these replacing the almond butter with cashew nut butter and they were delicious!

* If you do not have a cookie scoop, you can use a spoon
