Here's a delicious healthy recipe sent to me by one of my fabulous grain free porridge lovers. I made them too and they turned out perfectly, easy to make but what I really liked about them is they were so tasty and not too sweet.

1/2 cup almond meal
1/2 cup coconut
1/4 tsp baking soda
1/4 cup melted butter 50g
1 tbsp. maple syrup or your choice of sweetener
1 tbsp. water
Whisk dry ingredients together; add wet ingredients and mix. Place spoonfuls on tray and flatten with fork. Bake at 160 for 10 minutes. Take care not to burn
This will make about 10 small biscuits or 6 larger ones.
If the mixture is too wet to roll when you mix it - just add a bit more porridge.
Also, I think they would be delicious with some dark chocolate drizzled over the top.
Note: If you want them really crispy, after cooking for 10 minutes (as above), let them cool for 15 minutes and recook again for 10 minutes.
I took these to a show last week for samples and everyone loved them, they taste like the dutch bikkies called speculaas.
